Coconut Collagen Crepes with Blueberry Coulis

Soft and sweet, these collagen-infused coconut crepes are the ultimate feel-good treat

— topped with a vibrant, antioxidant-rich blueberry coulis.

Ingredients

Crepes:

— 2 eggs

— 2/3 cup all-purpose flour (or preffered flour of choice)

— 1 tbsp PEARL (Organic Coconut)

— 1/2 cup oat milk (or preffered milk of choice)

— 1 cup water

Toppings:

— Natural yoghurt (or coconut yoghurt)

— Fresh or frozen blueberries

— Dash of water

— Maple syrup (optional)

Method:

— Combine all the crepe ingredients in a bowl and whisk until smooth and silky.

— On a preheated pan over medium heat, pour the mixture onto your pan and quickly swirl it around so it’s nice and thin. Once bubbling, flip your crepe!

— Let the other side cook and take off the heat once done.

— Layer the crepes on top of each other and set aside.

— In a small saucepan, heat a handful of frozen blueberries with a dash of water. Stir until smooth and coulis-like.

— To your stack, add a spoon of yoghurt, your berry coulis, and maple too!
